Chop celery and onions VERY FINE and put in preserving kettle.
Put tomatoes in boiling water (just until skin breaks) to make peeling easier. Peel tomatoes. Chop tomatoes and put in preserving kettle.
Add rest of ingredients and boil 4 hours or until thickened. (A whole potato in the pot JUST until cooked helps to thicken. Remove and discard potato.)Volume reduces about 1/3.
