Method
- Chop celery and onions VERY FINE and put in preserving kettle.
- Put tomatoes in boiling water (just until skin breaks) to make peeling easier. Peel tomatoes. Chop tomatoes and put in preserving kettle.
- Add rest of ingredients and boil 4 hours or until thickened. (A whole potato in the pot JUST until cooked helps to thicken. Remove and discard potato.)Volume reduces about 1/3.
- Pour into HOT, STERILIZED mason jars and seal.
